Is there any way I can cut circles with text inside them? Not sure how to line them up.

Yes! Depending on which model Cricut you have, there are several different ways.

What I do is :

Cut the circle on a piece of cheap cardstock.
Remove the circle but keep the rest of the paper in place, making a template (it helps to tape the paper to the mat, especially if you are doing multiple cuts).
Slide your paper with your words printed on it under the template and center your words in the circle.
Press the printed paper to the mat.
If you taped the template, flip it out of the way.
Load your mat and cut your circle.
